Vantage White is a 2-part blend, consisting of Riesling (82%) and Chardonnay (18%) from 2022, 2023 and 2024. The primary aromatics are rooted in white peach, Barlett pear, rose water, cherry blossom and candied green apple. Once aerated, and deliberately oxidized, a subtle note of honey and mango appear, courtesy of cool fermentation techniques and choice of yeast. The palate mirrors the nose, with a focus on Ginger Gold apple, nectarine and pineapple, neatly packaged around bright acidity, and residual sugar to intensify palate profile.\u003c\/p\u003e\n\u003cp\u003eEach cultivar was picked between the second and third week of September, in 2022, 2023, and 2024 at 7am, utilizing a machine harvester with an optical sorter attached. The different cultivars were for 3 weeks, no greater than 18◦C, and then the Chardonnay went through 100% malo-lactic conversion, while the Riesling stayed with no conversion in stainless steel on fine lees for 1 and 2 years respectively for the 2023 and 2024 vintage. The 2022 Riesling and 2022 Chardonnay was aged in neutral French oak barriques (225L) for a minimum of 2 years, before élevage, assemblage, fining, filtration and bottling on May 5, 2025.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eFOOD PAIRINGS AND SERVING TEMPERATURE\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eWhen pairing, look to fatty \/ oily or chilli-dominant foods, to highlight the balanced alcohol and balance the sweeter notes. Dishes like Chiles Rellenos (spicy poblano chilies, charred, skinned and stuffed with Oaxacan-style cheese), Shrimp Fra Diavolo or Baechu Kimchi will work perfectly to balance residual sugar in this wine, while also highlighting acidity and perceived alcohol weight. Alternatively, adventurous foodies that want to highlight fruit and sweeter notes in the wine will look at pairings like Vantage White-Steamed mussels with garlic toast, Monkfish Piccata, Salvadoran-Style Pescado Frito, or Squid and Shrimp Fideuà with Allioli.
