WINEMAKER'S NOTES

Picked early morning on September 21st, our goal for this wine was to make a Chardonnay in a reductive style that focuses on varietal typicity and minimal intervention. Fermented with selective yeast and full malolactic conversion this Chardonnay has only been aged in stainless steel prior to bottling. 

SOMMELIER'S NOTES

Primary aromas on the nose of ripe Gala apples, asian pears, nectarine and mango. Due to malolactic conversion their are delicate hints of biscuit, butter and pastry. The palate mirrors the nose with a focus on apple, tropical stone fruit and a fleeting note of lychee. Bight and balanced acidity for a medium finish. To pair this wine, look to dishes that have a focus on butter or salt to compliment the acidity of this wine. Peach and basil ricotta flatbread brings sweet and savory together to marry the pairing. Alternatively, pair with lobster rolls on Brioche buns, the crisp acidity of the wine will cleanse your palate between bites without overpowering the delicate lobster. 

Cellar this wine for 2-5 years at room temperature (15-18 degrees Celsius)
