Tasting Notes

Zweigelt. Popularized in Austria. Made authentically in Canada. Our 2022 iteration of this variety pays homage to a style uniquely Ferox. Primary aromatics are rooted in red and black fruit (raspberry, sour cherry, and black current compote), and olive tapenade with subtle notes of black peppercorn, cinnamon and violet. With aeration, a note of mint becomes prevalent, courtesy of the compound piperitone found in a lot of cover crop vegetation in our Zweigelt block. The palate mirrors the nose focussing on cassis and blackberry, with a hint of black licorice and dark chocolate. Tannin structure is fine-toothed and integrated into the mid-palate and finish. Bright acid helps round off the mouthfeel and makes this wine a perfect stand-alone bottle.

Food Pairings

When pairing, look to foods high in salt and acid to highlight the fruitier notes of this wine. Adventurous foodies may look to fatty / oily or chili-dominant foods to highlight the balanced alcohol and spice notes. Dishes like tamarind-glazed black bass with a coconut-herb salad, or stuffed cabbage with lemony rice and wumac. Alternatively, vegetarians can look to dishes like grilled artichokes with an herb and lemon aioli, or a miso-mushroom crispy rice. Those willing to turn up the heat can look to dishes like a spicy lamb filo pie, classic Chicken Madras, Thai-style beef with basil and chilies (Phat Bai Horapha), or Korean spicy marinated pork with chilies and kimchi (Jaeyook Kimchi Bokum).
